Like other fruits low in sugar, raspberry must “undergo” maceration. The alcohol must come from brandy from wine in a proportion not exceeding 12.5 litres per 100 kg of fruits. To produce this brandy, it takes 8 kg of raspberry to get 1 litre of end product. The raspberry brandy should be served fresh. The alcohol produced from raspberry is highly delicate and it can be used with great flexibility.
