Like all fruits with a low sugar content, raspberry must “undergo” maceration. The alcohol used can only come from wine brandy, in a proportion not exceeding 12.5 litres for 100 kg of fruit. For the production of water of life, 8 kg of raspberries are required to obtain 1 litre of final product. The raspberry must be served fresh. The alcohol produced is very delicate and very flexible to use.
