Our terroirs

With more than 25 soil types, ranging from clayey loam to limestone, sand and granite, our 17-hectare vineyard offers great diversity and contrasting terroirs for different wine styles.

Ammerschwihr’s “Katzenstegel” locality, with its schist terroir, contributes to the production of Pinot Gris wines with unique characteristics, a mineral imprint and a particular elegance on the palate.

Schist terroir is a metamorphic rock formed from clay and fine sediments that have been subjected to intense pressure and heat over time. Schist soils are rich in minerals and trace elements, which have a significant impact on vine growth and grape development.

The terraced vineyards cultivated on this terroir produce wines of the highest quality. The terraces are designed to benefit from optimum sun exposure, allowing the grapes to ripen evenly and reach their full aromatic potential.

Grand Cru Kaefferkopf

The prestigious Kaefferkopf terroir has a long history, dating back to 1338, when it is mentioned in the land register of the Pairis Abbey in Ammerschwihr. Over the centuries, its reputation has grown, and numerous books and theses mention it. In 1931, aware of the quality and commercial success of their wines, the Ammerschwihr vineyard owners decided to protect the Kaefferkopf name. This process was completed in 1932, making Kaefferkopf the first officially recognized and delimited lieu-dit, forty years before the A.O.C. Alsace Grand Cru appellation was created.

The Grand Cru Kaefferkopf enjoys a typically Alsatian microclimate. Protected from the prevailing winds by the Vosges mountains, the vineyards enjoy a semi-continental climate, characterized by hot, sunny summers and cold winters.

The geology of the Grand Cru Kaefferkopf is extremely diverse, helping to create an exceptional terroir for Alsace winegrowing. The vineyards are located on the steep slopes of the Vosges hills, at altitudes ranging from 200 to 350 meters. The soils of this terroir are mainly composed of limestone, sandstone and clay, giving the wines a characteristic aromatic richness.

The Kaefferkopf is famous for its noble grape varieties, such as Gewurztraminer and Riesling, which express all their aromatic complexity here.

Grand Cru Schlossberg

Grand Cru Schlossberg is one of Alsace’s winegrowing treasures, renowned for producing exceptional wines, particularly Riesling. Situated near the town of Kaysersberg, this vineyard enjoys an ideal southern exposure, on steep, sunny slopes that we terrace with dry stone walls.

This terroir is composed mainly of granite, giving a unique minerality to the Riesling grown here. The roots of the vines penetrate deep into these mineral-rich soils, taking on the characteristics of the terroir. The minerality present in this wine is not the result of aging, but rather of the freshness provided by the granite.

The Riesling du Grand Cru Schlossberg thus expresses a striking minerality, with notes of gunflint, chalk and flint. This minerality blends harmoniously with aromas of lime, citrus and peach, creating a refined, complex aromatic profile.

The Schlossberg’s particular microclimate, characterized by warm days and cool nights, favors slow, gradual ripening of the grapes. This slow ripening allows the Riesling to fully develop its minerality, while retaining a lively, balanced acidity.

Grand Cru Hengst

Grand Cru Hengst is an exceptional vineyard located in the commune of Wintzenheim. This remarkable terroir benefits from optimum exposure to southern sunshine and clay-limestone soils as well as sandstone marl.

The emblematic grape varieties grown in Grand Cru Hengst are Riesling, Gewurztraminer and Pinot Gris. Each expresses its own unique character, offering a wide range of aromas. Riesling stands out for its citrus and mineral notes, while Gewurztraminer seduces with its floral and spicy fragrances. Pinot Gris charms with its nuances of ripe fruit and velvety texture.

The history of Grand Cru Hengst dates back to the Middle Ages, and its name evokes the region’s equestrian tradition. The resulting wines are often considered among Alsace’s finest, and have won numerous awards and distinctions.

When tasted, Grand Cru Hengst wines stand out for their harmonious balance, aromatic intensity and great ageing potential.

Our entire vineyard is certified High Environmental Value. What’s more, most of our plots are organically farmed. More biodiversity to produce excellent wines.

Our commitment

From the outset, we have been committed to the environment. We adopt sustainable viticultural practices to preserve the richness of our terroirs. Ecosystem-friendly growing methods, rational management of water resources and the promotion of biodiversity are at the heart of our approach. What’s more, we prefer to use as few synthetic products as possible, and we only use organic fertilizers to guarantee quality wines while preserving the health of the soil.

We are also committed to reducing our carbon footprint. From energy-saving management to the adoption of environmentally-friendly transport practices, we are constantly looking for ways to improve our environmental performance. Our aim is to produce exceptional wines while minimizing our impact on the planet, in order to preserve this natural heritage for future generations. We believe in responsible viticulture and strive to put it into practice every day at Domaine Pierre Adam.
